The Cottage’s Strawberry Jam Goat Cheese Cheesecake Recipe

Strawberry Jam Goat Cheese Cheesecake

Ingredients:

For the Cheesecake:

  • 12 ounces goat cheese, room temperature
  • 16 ounces cream cheese, room temperature
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 1 cup sour cream
  • 4 large eggs, room temperature
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon extract
  • 2 tablespoons flour

For the Cornbread Crust:

  • 2 cups cornnbread, crumbled
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 2 tablespoons cinnamon

Toppings:

  • 1 cup strawberry jam or preserves
  • White chocolate shavings, as garnish

Instructions:

  • Line a 9″ springform pan with parchment, then lightly spray with pam spray, set aside.
  • Make the Cornbread Crust: Crumble the prepared cornbread into a bowl, add the butter, sugar, and cinnamon. Mix thoroughly. Gently press the cornbread mixture into the bottom of the pan. Tightly wrap foil around the outside of the pan, making sure there are no gaps. Set aside.
  • Make the Cheesecake: Preheat the oven to 350 degrees Fahrenheit. In the bowl of an electric mixer, fitted with the paddle attachment, or with a hand mixer, combine the goat cheese, cream cheese, sugar, and vanilla, and beat until creamy. Add the sour cream and beat until smooth. Add the eggs, one at a time and mix just until combined, scraping down the sides of the bowl. Add the lemon juice, lemon extract, flour, and mix until combined.
  • Pour the mixture into the springform pan then place it in a larger baking dish/cake pan or roasting pan. Pour enough water to reach at least halfway up the side of the springform pan.
  • Gently place in the oven and bake for 55-60 minutes. If the cheesecake is browning too fast, tent with foil and continue baking. Allow cheesecake to cool completely before unmolding.
  • Assemble the cheesecake: Once the cheesecake is fully cooled, run a sharp knife between the cheesecake and pan to loosen it before unmolding. Remove the parchment paper then transfer to a serving platter.
  • Spread the strawberry jam on the top of the cheesecake, garnish with the white chocolate shavings. Enjoy!
